Ingredients
- 1 can (8 oz) pineapple tidbits
- 3 cups grated carrots
- 3 cups grated apple
- ½ cup raisins
- 1 pkg (10.5 oz) silken tofu
- 2 Tbs honey or maple syrup
- 1/8 tsp cinnamon
- Chopped soy nuts (optional)
Directions
Drain the pineapple tidbits, reserving the juice. In a bowl combine the pineapple, carrots, apple and raisins. Measure ½ cup reserved pineapple juice. (You may need to add additional liquid (preferably fruit juice) to make ½ cup. In a blender puree the tofu with the ½ cup juice, honey and cinnamon until smooth. Pour over carrot mixture and toss to coat well. If desired, top each serving with soy nuts.
