What is tofu?

Tofu, pronounced (toe-fu), is a soft, cheese-like food made from curdling fresh, hot soymilk. Curdling agents used include nigari (a compound found in ocean water) or calcium sulfate, a naturally occurring mineral. The resulting curds are pressed into a solid block. Tofu is available as silken or regular. Silken tofu is generally easier to handle and has a smoother consistency. Regular tofu has a compressed cottage cheese consistency. Both types are available as extra firm, firm and soft.

Where can I buy tofu?

Tofu is sold in water-filled tubs or in aseptic (shelf-stable) brick packs. Most supermarkets carry both types in the produce aisle. Asian and natural foods stores also carry tofu. Chinese-style tofu (packed in water) should be refrigerated. Once opened, you can keep this tofu fresh for one week by changing the water daily. Unopened Japanese-style tofu (shelf stable package) will stay fresh for several months. If opened, leftovers should be rinsed and covered with fresh water for storage. Again, changing the water will keep the tofu fresh for about a week. Tofu can also be frozen for up to five months. Defrosted tofu will be caramel-colored with a chewy, spongy texture. These characteristics make it ideal for soaking up marinades.

Using Tofu

Tofu's soft consistency and mild taste make it a versatile ingredient. Soft tofu can be pureed into dips, dressings and puddings. Pureed tofu will replace cream in soups. Or use pureed tofu to partially replace mayonnaise, sour cream, yogurt, cream cheese or ricotta cheese in recipes. Soft tofu is also delicious blended with fruit in a smoothie. Firmer varieties can be cubed or sliced and added to stir-fries, pasta dishes, soups or stews. Crumbled soft or firm tofu adds protein to meatloaf. Add a package of seasoning mix to sautéed crumbled tofu to create a tasty, high- protein taco, enchilada or burrito filling. Mashed tofu can replace some of the eggs in egg salad or scrambled eggs. Tofu burgers are another option. Combine mashed tofu, bread crumbs, chopped onions and a favorite seasoning, then cook as you would any burger. Marinated firm tofu is delicious grilled. Firm, blended tofu can also be used to replace eggs in pies and other desserts.
