Autumn Fruit Slaw

Ingredients

  • 1 pkg (10.5 oz) silken tofu
  • 1/4 c. undiluted apple juice concentrate
  • 2 Tbs honey
  • 2 Tbs lemon juice
  • 1/4 tsp ground nutmeg
  • 4 c. finely shredded cabbage
  • 1 c. seedless grapes
  • 1 pear, cored and chopped
  • 1 apple, cored and chopped

Directions

  1. Make the dressing by whirling the tofu, apple juice concentrate, honey, lemon juice and nutmeg in a blender until very smooth.
  2. In a serving bowl, mix the cabbage, grapes, pears and apples together. Pour the dressing over the salad and toss well, being sure the apples and pears are coated to prevent browning.
  3. Serve well chilled.

8 servings. Serving size: 1 cup
