Autumn Fruit Slaw
Ingredients
- 1 pkg (10.5 oz) silken tofu
- 1/4 c. undiluted apple juice concentrate
- 2 Tbs honey
- 2 Tbs lemon juice
- 1/4 tsp ground nutmeg
- 4 c. finely shredded cabbage
- 1 c. seedless grapes
- 1 pear, cored and chopped
- 1 apple, cored and chopped
Directions
- Make the dressing by whirling the tofu, apple juice concentrate, honey, lemon juice and nutmeg in a blender until very smooth.
- In a serving bowl, mix the cabbage, grapes, pears and apples together. Pour the dressing over the salad and toss well, being sure the apples and pears are coated to prevent browning.
- Serve well chilled.
