Pizza Roll-Ups
Ingredients
- 2/3 c. textured vegetable protein (TVP)
- 2/3 c. boiling water
- 1/2 lb lean ground beef
- 1/2 c. chopped onion
- 1 1/2 c. pizza sauce
- 2 c. grated mozzarella cheese
- 1/4 c. mushrooms (stems and pieces)
- 1/2 c. chopped green pepper
- 1/2 tsp oregano
- 1 can (10 oz) condensed tomato soup
- 1 Tbs dry onion soup mix
- 6 flour tortillas
Directions
- Rehydrate TVP by pouring boiling water over top.
- Combine ground beef and onion in glass caserole dish. Cover with class lid and microwate on high for 5 minutes. Drain.
- Stir in pizza aauge, 1 c. cheese, mushrooms, rehydrated TVP, green pepper and oregano.
- Spoon about 1/2 c. of meat mixture into center of tortilla and rollup.
- Place in 2-quart 12x7-inch glass baking dish.
- Combine soup and dry onion soup mix in small bowl. Pour over tortillas. Sprinkle with remaining 1 c. cheese. Microwave on high for 14-16 minutes.* Garnish with green pepper.
*If preferred, bake in 350 degree oven for about 25-30 minutes or until heated through.
