Green “Sweet” Beans

What are sweet beans?

Sweet beans, also known as edamame, are harvested just prior to maturity, while the pods are still green. At this stage they lack the "beany" flavor associated with most soy foods. These refreshingly tasty beans are smooth, firm and crisp. Unlike most vegetables, sweet beans retain their texture after cooking. Similar in size and color to green peas, sweet beans can be eaten as a side dish or snack, or added to salads, soups, stir-fries and casseroles.

Where can I buy sweet beans?

Look for sweet beans with other frozen vegetables in supermarkets and natural food stores. Sweet beans are sometimes combined with other frozen vegetables and sold as mixes. Fresh sweet beans, still in the pod, can be found in natural food stores, some farmer's markets and Asian food stores.

Using sweet beans

Sweet beans can be used like any other frozen vegetable. Add them to soups, stews, pasta dishes, stir-fries, casseroles and salads. Pureed sweet beans add texture, color and flavor to hearty soups and stews.
