Ingredients
- 2 c. cooked green soybeans
- 1 c. chopped green bell pepper
- 1/2 c. chopped onion
- 4 hard-cooked eggs, sliced
- 1 (16 oz) package lettuce
- 1 lb shredded deli roast beef
- 2 c. low-fat mayonnaise
- 2 Tbs sugar
- 1/3 c. shredded Cheddar cheese or soy-style Cheddar
- 1/4 c. grated Parmesean or soy-style Parmesean
Directions
- In a bowl combine soybeans, green pepper, onion and eggs; set aside.
- Place lettuce on the bottom of a 9x13-inch pan. Top with begetable mixture and roast beef.
- In a separate bowl combine mayonnaise and sugar. Pout over roasy beef.
- Sprinkle with Cheddar and parmesean cheese.
- Refrigerate until ready to serve.
