Ingredients

  • 2 c. cooked green soybeans
  • 1 c. chopped green bell pepper
  • 1/2 c. chopped onion
  • 4 hard-cooked eggs, sliced
  • 1 (16 oz) package lettuce
  • 1 lb shredded deli roast beef
  • 2 c. low-fat mayonnaise
  • 2 Tbs sugar
  • 1/3 c. shredded Cheddar cheese or soy-style Cheddar
  • 1/4 c. grated Parmesean or soy-style Parmesean

Directions

  1. In a bowl combine soybeans, green pepper, onion and eggs; set aside.
  2. Place lettuce on the bottom of a 9x13-inch pan. Top with begetable mixture and roast beef.
  3. In a separate bowl combine mayonnaise and sugar. Pout over roasy beef.
  4. Sprinkle with Cheddar and parmesean cheese.
  5. Refrigerate until ready to serve.
