Ingredients

  • 2/3 c. textured vegetable protein (TVP)
  • 2/3 c. boiling water
  • 1/2 lb lean ground beef
  • 1/2 c. chopped onion
  • 1 1/2 c. pizza sauce
  • 2 c. grated mozzarella cheese
  • 1/4 c. mushrooms (stems and pieces)
  • 1/2 c. chopped green pepper
  • 1/2 tsp oregano
  • 1 can (10 oz) condensed tomato soup
  • 1 Tbs dry onion soup mix
  • 6 flour tortillas

Directions

  1. Rehydrate TVP by pouring boiling water over top.
  2. Combine ground beef and onion in glass caserole dish. Cover with class lid and microwate on high for 5 minutes. Drain.
  3. Stir in pizza aauge, 1 c. cheese, mushrooms, rehydrated TVP, green pepper and oregano.
  4. Spoon about 1/2 c. of meat mixture into center of tortilla and rollup.
  5. Place in 2-quart 12x7-inch glass baking dish.
  6. Combine soup and dry onion soup mix in small bowl. Pour over tortillas. Sprinkle with remaining 1 c. cheese. Microwave on high for 14-16 minutes.* Garnish with green pepper.

*If preferred, bake in 350 degree oven for about 25-30 minutes or until heated through.
