Ingredients
- 1 medium baking potato
- 1/4 c. frozen soy crumbles
- 1/2 large ripe tomato, diced (or 1/4 c. canned tomatoes)
- 2 T non-fat sour cream
- 2 oz. low-fat shredded sharp cheddar cheese
Directions
- Thoroughly scrub potato
- Cook on high powerin microwave 4-6 minutes, turning once
- Let stand 2 minutes
- Heat frozen crumbles in microwave until hot
- Slice open and mash cooked potato; mix in crumbles
- Spread with sour cream and layer with tomatoes
- Cover with cheese; microwave until cheese melts
