Ingredients
- 1 c. margarine
- 1 c. white sugar
- 1 c. packed brown sugar
- 1 tsp vanilla
- 1/4 c. silken tofu
- 1/4 c. water or soy milk
- 1 1/2 c. all-purpose flour
- 1/2 c. soy flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp salt
- 1 c. quick oatmeal
- 1 c. chocolate chips
- 1/3 c. soy nuts, crushed
Directions
- Preheat oven to 350 degrees
- Cream margarine and sugars in a large mixing bowl until light and fluffy
- Add vanilla, tofu and water
- In a separate bowl, stir toegther flours, soda, baking powder and salt
- Gradually add dry mixture to creamed mixture
- Stir in oats, chocolate chips and soy nuts until well-blended.
- Bake on a lightly sprayed cookie sheet for 11-12 minutes
